[CH] Tonight's Dinner - Stir-Fried Shrimp & Asparagus

This was tonight's dinner. It was quick to put together, once the shrimp
were defrosted, and very good. I wish I had made double the recipe. I wanted
more.

                      Stir-Fried Shrimp & Asparagus

   2      tbsp          sesame seeds
   2      tbsp          vegetable oil
   2      lg            onions -- peeled, sliced thin
   1      lb            large shrimp -- cleaned & devein
   1      lb            thin asparagus stalks -- trim & cut thin pc*
   1      tbsp          soy sauce
   2      tbsp          rice wine
   1      bunch         scallions -- sliced thin
                        chile paste -- ** see note

In wok, or large nonstick skillet, heat on medium heat. Add sesame seeds and
toast by sauteeing them in dry skillet or wok until light brown. Do not
burn. Remove and reserve.

In same wok or skillet, heat vegetable oil. Saute onion until it is golden
brown; add asparagus and cook until tender - about 3 minutes.* Add shrimp.
Cook until no longer pink. Add soy sauce and wine.

To serve: Serve over rice or put on the side of rice. Garnish with reserved
toasted sesame seeds, sliced scallions and stir in a bit of chile paste..

NOTES : Risa's notes:

* I used already cooked asparagus so I just cut it in 1" pc, diagonally, and
cooked it for a lot less time.

** Buy Lan Chi brand. It comes in a small jar. The best one is Chile Paste
with Garlic. You can find it in oriental markets or online.
