I hope no one posted this already and that I missed it, but I was searching 
for some recipes on making hot sauce and came upon the following site:

This is a "make it yoiurself" shop and includes stuff for making bread, wine, 
beer and even hot sauce. One item of interest was Pédologues Hot Pepper 
Mash in jalapeno, habanero or cayenne. There are also chile powders by 
the pound and 6 recipes for making hot sauce.

It's great if your looking for  mash in 2.5 gallon or drums. Habanero powder 
starts in  1 pound sizes and goes up from there.
