Another way of using up leftovers. This was delicious. Of course, you COULD
make it hotter. I left it so we could top it with hot sauce, if we wishes,
which we both did (my homemade tabasco sauce and DH used his Frank's Red
Hot).

This was very good and very simple to put together.

                        Turkey Tortilla Casserole

  Amount  Measure       Ingredient -- Preparation Method

                        cilantro-flavored oil -- for brushing
   2      cups          nacho-flavor taco chips -- crushed a bit
   1 1/2  cups          cooked turkey -- diced
     1/2  16 oz jar     Red Lion Red Serrano & Black Bean Salsa**
   1      cup           frozen peas -- thawed
   1                    roasted poblano pepper -- peeled & diced
     1/4  cup           Roasted Garlic Sour Cream -- * see note
     1/2  cup           Pepper Jack Cheese -- shredded
                        Garnish:
                        chopped cilantro
          dollop        Roasted Garlic Sour Cream

Preheat oven to 350°F. Brush 8x8" baking pan with cilantro oil. Set aside.

In large bowl, combine turkey, salsa, peas, poblanos and sour cream. Mix
well. Place 1/2 the taco chips on the bottom of the prepared pan. Top with
the turkey mixture.

Bake for 1/2 hour. Top with cheese and remaining taco chips.

Bake for another 15 minutes. Remove from oven and let sit for 10 minutes.

Serve, garnished with a dollop of sour cream and a sprinkle of chopped
cilantro.

NOTES : Risa's notes:

* Roasted Garlic Sour Cream is by Friendship. If you can't find it, mix a
bit of roasted garlic into some sour cream.

** Use whatever salsa you have. I had this (Thanks Chip) and it was
wonderful.
