I'm not a big oatmeal fan, but I love hot sauce in grits.  I've used simpler
sauces like Crystal or Tabasco, and I also like more complex
habanero/chipotle sauces -- Matouk's is very good.  I prefer to add butter
also, but grits, hot sauce, salt, and pepper is a good combo without the
butter.
