Yes well we actually need some relatively moderate, sane and sober people
here to provide the insurance companies with reliable accounts of the
expressions on the faces of us crazies as we blast ourselves with heat.
I'm gradually moving away from using sauces and moving toward using powders.
A sauce brings with it extra flavors that can be great for some uses, but
extra noise in others. For example, on some nice broccoli, I'd rather use
red flakes or a powder because I don't want a complete sauce flavor package
superimposed on the rich, simple vegetable flavor.
One sauce I could never figure out was the type of "chili sauce" made by the
US mainstream catsup manufacturers like Heinz, etc. For the life of me, I
cannot distinguish it in any way from ordinary catsup, except for the name.
