[CH] Green Chile-Beef Jerky Bread

I made this today. Dough was made in ABM and then hand
shaped and baked on the pizza stone. Interesting
bread, came out beautiful.

                       Green Chile-Beef Jerky Bread

                        Dough:
   1      cup           lukewarm water
     1/4  cup           lukewarm milk
   1      tsp           honey
   1      tbsp          olive oil
     1/2  tsp           salt
   2 3/4  cups          bread flour
     1/2  cup           cornmeal
   1 1/2  tsp           Red Star yeast
                        At Beeps:
   1      long          beef jerky strip -- cut in sm
pc
   3                    roasted green chiles --
peeled, seeded &
                        chopped

In bread pan, place ingredients, except for chiles &
beef jerky, in according to manufacturers directions.
dough cycle. At beeps, add jerky and chiles.

When dough cycle is over, punch dough down and then
let
it rise once more in pan, covered.

Remove to floured surface. Form into either 1 large or
2 small loaves. Any shape you want - rounds, ovals,
rolls, whatever.

Slash the tops, depending on how big loaf is, could be
2-3 slashes. Rolls take 1 slash.

Rub lightly with olive oil, or cilantro infused oil
(Consorzio makes a great one). 

Cover with a clean kitchen towel. Let sit while oven
preheats.

Preheat oven to 400°F. When hot, place on greased
baking sheet. Put sheet with bread on it in oven and
bake for 10 minutes. Remove from sheet onto pizza
stone, if you have one. If you don't, just bake for
another 15 minutes.

Bread should be done, between 190 and 200 internally,
at that point. Remove to wire rack for cooling.
