I had to mess a lot with the seasoning. Was not hot enough for my taste
nor spicy enough, if that makes sense.
Here's sort of what I ended up with:
 2 1/2 # ground turkey
 1 1/4 # ground pork fat
 2 lg jalapenos
 1 lg poblano, roasted
 1 bunch scallion(whites only)
 1 bunch cilantro
 1 ? left over red pepper salsa (1/2 c+?)
 1 T garlic, minced
 2 T Penzey's chipotle
 1 T Penzey's ancho
 1 T Gephart's chili powder
 1 t cayenne
 1 T ground cumin
 1 T kosher salt
 1 T garlic powder
 1 T black pepper
 + misc spices
 + 1 t "amesphos"
 1 lime (thanks Buzz!)
used a little beer also, don't remember what kind...probably coors extra
gold. I just noticed this recipe is starting to look a lot like my BBQ
sauce!!!

these are actually conservative quantities because of the peppers in my red
pepper salsa that I tossed in and also because I did so much adjustment on
it the next day. But it seems pretty tasty now and I think it will be great
in all our mexicany/ sw food we eat all the time.
