Chairman Kaga : As challenger, what did you make for us?

Challenger : I only had time to complete one dish, a Mexican specialty I learned in Kyoto.  Shrimp heads wrapped in bean curd with a mole sauce.  The moles I selected are only found burrowing in select bamboo groves and are only harvested during the Summer festival by boys in Samurai outfits.  I used the mole's innards for that slightly bitter taste that only the distinguishing Japanese palate can detect, but I used smoked cayenne pepper, or chipotle in America, to enhance it's natural saltiness.

Taster : Oooohhh!!!  Aaaahhh!!!  I love the way this spreads all through my mouth!!!
