Hi everyone I joined a month or so back and most of the time I just 
read what everyone else writes. Tonight I thought that I would say 
what we had for dinner. Here goes.






1 lb. crawfish tails (peeled and with fat)1 lb. fettuccini noodles(16oz.
) Heavy cream1 bunch chopped green onions2 tsp. chopped garlic2 celery 
sticks chopped finely2 tsp. ground basil leaves Debz Cajun Season 
salt or any good Cajun seasonings 1 tsp of Debz cayenne pepper sauce 
or a good hot sauce one of Jim’s or Cajohn’s will work well or to 
taste.For chili heads that like heat use Confederate hell fire or 
any sauce that has heat.4 tbsp. butter1/2 cup grated parmesan cheese 




Procedure:	Sauté onions, garlic, and celery in butter in a black 
iron skillet or a 2 qt. heavy saucepan. Add Heavy cream. Mix with 
a wire whisk until smooth. Add basil, salt, and both peppers. Simmer 
for about 15 minutes over medium heat, stirring often to keep from 
scorching. Add crawfish tails, hot sauce and cook over low heat for 
about 7-10 minutes. Cook noodles according to package directions 
and drain well. Place noodles in large glass serving bowl and add 
crawfish mixture and toss well to get even consistency. Add grated 
parmesan cheese and toss lightly. This will make about 6 good servings.
Serve with a fresh salad and some garlic bread.
