My standard trick is to open a can of chipotles in adobo, rub the chops with 
as much adobo as I can make stick, and then do 'em on a super-hot cast iron 
grill pan.

When they come out of the pan, I serve some of the chipotles on the side, 
mashed up a bit, almost like a dipping sauce.

Of course, you *will* have chipotles left over.  I trust you'll find 
something to do with them.
