Simmer them gently in orange juice with thin-sliced onion.  Add garlic, 
peppers, herbs to taste.  You could still go with a jerk seasoning.

Drip drip drip, oh MAN am I glad we did not have last weekend's weather one 
week earlier for the hotluck!  I'm sure the waterfalls would be very pretty, 
and I could probably get a picture of my tent going over the edge.

I am putting together a page of images from the Madison hotluck this week.
