We chop them into itty-bitty pieces and dry them in the microwave. 
They seem to keep flavor and color really well done that way.  We
dry them on a paper towel, and use that to pour them into an old
blue canning jar, where they live until we eat them.

We also freeze them in freezer bags.

They also grow well in a pot on the window sill for fresh chives in
the deep of winter.
