This was dinner the other night - Flying Flank Steak.
It was easy to do and delicious. Have no idea why it
was called that. I adapted it from a book I got a few
weeks ago.

                        Marinade:
6 tbsp scallions (both parts) --
minced
   3 tbsp soy sauce
   3 tbsp olive oil
   2 tsp dried thyme
          drop hot sauce
                        juice of 1 lemon
                        Steak:
   2 flank steaks

In a bowl, combine marinade ingredients. Mix well.
Place steaks in a shallow dish. Cover with marinade
and refrigerate for 1 hour, turning several times.

When ready to cook, preheat George Foreman Grill. When
hot, remove steaks from dish and let excess drip off.

Place on grill and cook for 4-5 minutes per side,
until just pink inside.

Serve with mashed potatoes and fresh peas.
