When I first encountered chiles (on the top of Nachos
at Chi-Chi's), I took them off. A couple of years
later, I tried one. Ate all the jalapeno slices off
the nachos in one sitting.

anaheim - as they were the only ones I could find at
HD and other neighborhood nurseries. This was 1993.
the way to habaneros. I find I can handle almost all
of them - some of them in great amounts at one sitting
and some in smaller amounts. Love them all.

I do enjoy all my chiles with some other flavors
involved. Just the chile by itself is not the way I
enjoy them. I always have to have them inside
something or strewn across the top or sandwiched in
between.

So, I do think it is a must to start with the minor
ones. Get used to them and then go upward on the
scoville scale. Eventually, after a few years,
habaneros will be nothing to you. This is what I've
found. When I first tasted Tabasco habanero sauce, I
thought it was way too hot for me. The same with Inner
Beauty. Now it is so mild to me. Even my DH, who is a
medium C-H at most, ate some last week. He said "that
is hot" and ran back to his Frank's Red Hot. At least
he is trying!
