[CH] Real Men DO Eat Quiche

Hi All --

Made a quiche last night for dinner and it turned out quite well -- thought
it might be an interesting thread.  I mean, who doesn't like chiles and eggs
together?  Here's what I made:

Bacon-Spinach Quiche

Enough 3-2-1 dough for a 9" pie crust
1 T Dijon mustard
3 eggs
1.25 cup milk
0.25 cup sour cream
0.5 cup grated cheddar
0.25 cup grated Romano
0.25 t. cayenne powder
0.5 t. Tabasco sauce
0.5 lb bacon, fried and crumbled
0.5 lb spinach, washed, julienned, blanched for 30 sec, and drained
2 green onions (green and white parts), thinly sliced
salt and pepper

Roll refrigerated 3-2-1 dough into a circle and place in 9" pie pan.  Prick
with fork, lay some aluminum foil on top and cover with dried beans.  Bake
at 350 for 10 minutes.  Brush Dijon over pie crust and return to oven for 5
minutes (without foil and beans).  Remove and cool.  Mix remaining
ingredients together remaining ingredients and add to cooled pie crust.
Return to oven for 30 minutes or so -- just until quiche is set and golden
brown on top.

A few notes:

1.  Some minced fresh cayenne (or similar) chile would have been nice, but I
did not add any.  My wife is pregnant (our first child!!) and I have to be
careful with chiles as they now tend to give her heartburn.

2.  I served this (my portion) on a bed of onions and jalapenos that I had
caramelized in some of the rendered bacon fat (it doesn't take much).  I
would *highly* recommend this approach.

3.  If you serve this accompanied by a watercress salad with red onion,
apricot, and sweet peppers, you can expect 4 servings or so.

4.  If you don't feel like dealing with 3-2-1 dough, slice a scrubbed,
peel-on baking potato paper thin (I use a mandolin).  Season the potato
lightly with red seasoning and layer in a buttered square Pyrex.  Use 0.5
cup more milk and an extra egg in your filling.
