This was tonight's dinner - Southwest Turkey Wrapper.
This was sooooo good and easy. Make the "burgers" -
cook them and place them in a warm tortilla. Wrap it
and then add your toppings. I made a Lime Crema -
mixed Key Lime Juice with some sour cream. It was
yummy.

   1      lb            ground turkey
     1/2  cup           scallions (white & Green
parts) -- minced
   3      tbsp          cilantro -- chopped
   2                    canned chipotle chiles --
minced
   2      tsp           ground cumin
   1      tsp           mexican oregano -- crumbled
                        salt and pepper -- to taste
   4                    flour tortillas (large size)
                        salsa -- for garnish
                        sour cream -- for garnish

In a large bowl, combine turkey, scallions, cilantro,
chipotle, cumin and mexican oregano. Mix well. Add
salt and pepper and mix again. Form into 4 long, thick
cigar-shape burgers. Set aside. Refrigerate until
ready to use.

Prepare barbecue (or preheat George Foreman Grill).
When hot, cook burgers for 5 minutes or until cooked
through but still juicy (5 minutes for charcoal grill,
or 5-6 for GFG).

Soften tortillas by placing them in foil,wrapping
tightly and putting them on the grill until they are
heated through. This should take a couple of minutes. 

Remove from foil. Spread a bit of salsa on tortilla
and place one burger on top of it. Wrap up and place a
bit of salsa and sour cream in the open part. 

Continue until all 4 are wrapped. Serve immediately
with mexican-style side dishes or your usual bbq
accompaniments.

Risa's notes:

I made a Lime Crema to go with it. I drizzled in the
juice of 1 key lime to 1/2 cup of sour cream. Mixed it
well and placed it on the outside parts of the wrapped
sandwich. I also spread some on the inside.
