Perhaps this turns on a distinction between 'sour' and 'bitter' where sour 
flavor might come from lemons or some such.  I've made some green sauces 
from unripe tomatoes or peppers, sometimes with tomatillos, and they have 
had a hot and bitter flavor, but they also taste 'green' and sharp like a 
green tomato.

My dictionary doen't shed much light on the distinction:

bitter - having or being a taste that is sharp, acrid and upleasant

sour - having a taste characteristic of that produced by acids; sharp, tart, 
or tangy as lemons and vinegar

Maybe you could combine green scotch bonnets with lime or lemon juice as a 
start.
