People have mentioned brining and alum. Another method is to add a
grape, black cherry or horseradish leaf to each jar.

Some old time recipes called for a soak in lime water (that's Calcium
Hydroxide not the citrus fruit), then refreshing. But such recipes have
fallen out of favour in recent times. I could dig some up though if
you're curious.
