[CH] Red rice

Friends and Neighbors,

While in Savannah this summer, we were served what was called "Savannah Red
Rice"  With a very sketchy recipe and a lot of experimentation, this passes
as pretty good (my opinion) Red Rice.  Makes a great side dish.
(Measurements are approximate)

4-6 Slices meaty bacon
1 large onion -- coarsly chopped
2 stalks celery finely chopped (So my youngest son won't try to pick it out)
1 large green bell pepper coarsly chopped
2 chiles (I used anaheims) roasted, peeled, seeds removed and chopped
1 14 oz. can diced tomatoes
1 12 - 16 oz. can tomato sauce
1 tsp (or slightly less) salt
1 tsp black pepper
1 - 2 tsp hot pepper sauce, to taste.  (I used a Louisiana Crystal type
sauce)
1 1/2 cups uncooked ricec

Fry bacon till crisp, drain on paper towels.  Saute onion, celery, peppers,
spices in bacon grease.  Add tomatoes and tomato sauce,  and enough water to
make 3-4 cups of liquid.  Add rice, bring to boil, reducee heat, cover
tightly and simmer for 20 minutes, or until water is absorbed, add bacon and
remove from heat, let stand for 10 - 15 minutes, fluff with fork and serve.
To kick up the heat, you can use a good powdered pepper, I have used some of
Uncle Steves Smoked Red Savina Powder.

I've made this with olive oil to saute the vegetables instead of bacon, and
it turns out just as good, but our boys like the bacon flavor.
