[CH] Last Night's Dinner - Low Carb Salmon Cakes

This was last night's dinner. It was very good. Eating
low carb can be quite difficult sometimes but the
Special K crumbs (have to make them yourself - grind
Special K finely) are a bit lower in carb than the
regular bread crumbs. I've been told to try grinding
pork rinds too but haven't tried that yet. Anyway,
these were very good - my DH and DS did not notice
that they were any different than the usual fish cakes
I've made in the past. Use whatever chiles you wish in
it. I used a jalapeno that Paul K sent me (thanks a
lot, pod pal) but you can use habs or fatalis or
anything you wish that would go.

                          Low Carb Salmon Cakes

   1      lb piece      salmon fillet
   1 1/4  cups          puffed rice cereal -- * see
note
     1/4  cup           red onion -- chopped
     1/4  cup           mayonnaise
   2      tbsp          fresh basil -- chopped
   2      tbsp          scallions -- chopped
   1                    egg -- lightly beaten
   1                    chile -- chopped
   2      tsp           dijon mustard
     1/2  tsp           salt
     1/2  tsp           hot pepper sauce
     1/2  tsp           dill weed
     1/4  tsp           black pepper
                        cooking spray

In a food processor, place the salmon, crumbs, red
onion, and mayo. Puree. Add chile, mustard, salt,
pepper sauce, dill, and pepper. Pulse on and off a few
times until combined.

Remove from work bowl. Mix in julienne basil leaves.

Spray a skillet with nonstick cooking spray. Put on
medium-high heat. 
Place 4 salmon cakes in pan and cook until browned on
each side, and salmon is no longer pink.

Remove to paper towel-lined plate.

Serve with corn on the cob (if not low carb), and some
bread (make into a sandwich).

9.7g fat, 3.7g carbo, 7.2g protein

NOTES : Risa's notes:

* I used Special K cereal. First I ground it into
flour, or crumbs. I used less than 1 cup of crumb
mixture for the recipe. Do it by feel.
