Mango season is just about to start here in the West, once its in full swing
we eat em with everything.
Fish , Cut squares of Aluminum cooking foil, lay in preferably fresh fish
fillets, ( caught by ones self ,makes it taste even nicer) slice mangoes,
and lay on top of fish fillets, slice chillies ( to own heat preferences)
and do same, a squeeeeeeeeze of fresh lemon, ( or is that a squeeze of
Lemming) and a little orange juice. Close top of Foil and leave to marinate
for an hour or two and then cook on Hot Barby for 2-3 minutes. Add to plate
of fresh mango and avocado salad, and mmmmmmmmmmmmmmm.
Then mango and ice cream for dessert.
Anyone wanna come over for dinner?
"I just love summer".
Marc the organic one.
