Allow them to ripen further. Maybe barrel age them. Don't add 'green' ingredients (cilantro, basil, etc). These are just a few ideas that come to mind. Seeds are pretty tasteless so I can't imagine that is what is giving you the flavor. -Jim C Mild to Wild
