[CH] Deer Hunters

For anyone that likes deer a good friend that lives in Wisconsin gave me 
some deer to cook for his family they like it hot so this is what we made. 
Hot Sauce is ours of course but you can change it if you like.

Ingredients:
3 lbs of deer meat, ground
1 lb chopped Cajun sausage
1 12oz can of beer ( I used bud ice)
2 8oz cans of tamato sauce (red gold)
1/2 cup bell peppers, chopped
1/4 cup cayanne peppers, chopped
1/4 cup longhorn peppers, chopped
1/8 cup habanero peppers, chopped ( I used the orange out of my garden)
1 cup onions, chopped
6 tbls minced garlic (fresh not jar)
1/2 lbs of butter (salted)
2 cups of water
1 cup Jack (black label)(can use three cups of water instead)
1/2 cup of chili powder
1 tbls paprika
1 tsp cumin
1 tsp oregano
3 tbs of my Thunder Struck(has a 35% salt mix) (it is a season blend may be 
abel to use a seasoned salt but cut back on it and only use 1 tbs instead)

Procedure:Saute the peppers and onions in the butter until the onions become 
clear. Add the ground deer meat, sausage and Thunder Struck(season salt). 
Brown the meat on low heat, stiring often. Once the meat has browned add the 
beer. Cover and simmer on low heat until the liquid is gone, stiring 
occasionally.

Add the tomato sauce, water (jack if you are using it) and remaining 
seasonings. Mix well and cover. Let simmer for two hours, or until chili 
reaches desired consistency.
