I don't know; I'll take them at their word and try using some of the malt 
vinegar I have.  Since these are for small batches, I figure there isn't 
much to lose.  I like they way they leave the exact choice of peppers to the 
cook.

Yes, this being a 1970 cookbook, notice there's no mention of a food 
processor, but there is a blender.
