[CH] Yesterday's Appetizer - Broiled Buffalo Wings

I got the following recipe from the newest Barefoot
Contessa cookbook - called Family Style. You make the
butter/ hot sauce mixture and brush it on wings and
then broil them.

These came out terrific. I found they needed to be
broiled for a bit longer than the requested time.
Otherwise they were a big hit. We mixed some ketchup
and chile paste together and dunked it into that. It
was terrific.

I used the Frank's Red Hot because my friend is not a
C-H but her hubby is. He dunked his into the chile
paste/ketchup combination (that my hubby made, BTW).
We were all happy.

                         BC Buffalo Chicken Wings

                        Wings:
  16                    chicken wings (about 3 lb)
     1/4  lb            unsalted butter (1 stick)
   1      tsp           cayenne pepper
   4      tsp           Frank's Red Hot Sauce
   1      tsp           kosher salt
                        Dip:
   1 1/2  cups          gorgonzola -- crumbled
   1      cup           good mayonnaise
     3/4  cup           sour cream
   2      tbsp          milk
     3/4  tsp           worcestershire sauce
   1 1/2  tsp           kosher salt
     3/4  tsp           freshly ground black pepper
                        celery sticks -- for serving

Preheat broiler.

Cut the chicken wings in thirds, cutting
between the bones. Discard the wing tips.
Melt the butter and add the cayenne, hot
sauce, and salt. Put the wings on a sheet
pan and brush them with the melted butter.
Broil them, about 3" below the heat for
8 minutes. Turn the wings, brush them 
again with the butter, and broil for 4
minutes more, or until cooked.

For the dip, place the blue cheese, mayo,
sour cream, milk, worcestershire sauce,
salt and pepper in the bowl of a food proc
fitted with a steel blade. Process until
smooth.

Serve the chicken wings hot or at room 
temp with the blue cheese dip and celery
sticks.
