Figure I'd share what I made for dinner Wednesday night. This could have been improved with some papaya and a few more habs, I think. Unfortunately, my roommate and his GF are not believers yet. (Even though they do eat my habanero brownies.)

1.5 lbs ground turkey
1 can texican style beans in sauce
2 plantains (just slightly overripe, not yet soft, but brown)
1 red habanero
1 small onion
2 cloves garlic
herbs to taste

Sautee the ground turkey with the habanero and onion until browned. Remove, reserving the juice and grease from the turkey in the pan. Mash the garlic and herbs with a pinch of salt and black pepper in a mortar and pestle. Bring the pan back up to heat, Add the garlic paste. Blend together over medium heat for about a minute. Add the plantains cut into cubes and brown. Once the plantains are browned, mix in the can of texican beans (AKA Texas Style Seasoned beans, or however they marekt them). Simmer on low heat for 20 minutes. Add stock or water if necessary.

Serve fajita style with sour cream, guacamole, tortillas, pico de gallo, or whatever the hell you want. Like I said, I would have preferred more habs in this. You could substitute chipotles in sauce for the habs if you like. I just prefer the flavor of habs.
