[CH] Tonight's Dinner - Salsa Chili

This was tonight's dinner - Crockpot Salsa Chili. This
came out really good. I used already cooked Jalapeno
Chicken Sausage that I ground up in the food processor
and I just browned it up after I cooked the ground
beef. I also browned some onion and green pepper and
put that in with some garlic. I thought it was
perfectly hot but DH complained a bit. Knew he would.

It was delicious. I put a chopped red thai finger
chile in at the end for myself. That was my garnish
along with some cilantro and sour cream. Yummy.

                         Slow Cooker Salsa Chili

     1/2  lb            ground beef
   3      links         Jalapeno Chicken Sausage --
casings removed
     1/2                green bell pepper -- chopped
     1/2                onion -- chopped
   3      cloves        garlic -- minced
   2      cups          Newmans Own Salsa
   1      15 oz can     diced tomatoes -- undrained
   1      4 oz can      diced green chiles -- drained
   1      tsp           chile powder
   1      15 oz can     pinto beans -- drained &
rinsed
                        Garnish:
                        shredded cheddar cheese
                        reduced fat sour cream
                        chopped cilantro
                        sliced scallions -- if desired

In a large skillet, cook beef, sausage, onion, green
pepper and garlic over medium-high heat for 10 minutes
until meats are no longer pink and vegetables are
cooked through. Stir occasionally until beef is
browned too.

Mix beef mixture and remaining ingredients in
crockpot, except for beans. Cook on LOW for 6-8 hours.

Stir in beans. Cover and cook on LOW for 5 minutes or
until hot.

To serve: Top with cheese, cilantro, sour cream and
scallions, or any of the toppings.

NOTES : Risa's notes:

If on a low carb plan, serve by itself. If on Level 2
Somersizing, you can serve this with 1/2 cup of whole
grain to sop up some of the juices. Make sure that the
sour cream has no sugars or starches in it though. Or
omit the sour cream.
