[CH] Today's crockpot

Seeing as I have not posted a recipe for some time, and I did not want 
folk to think I had died, here is what I am doing for tonight...Smoked 
Turkey with Lima beans. I picked up a smoked turkey leg, weighing 1-1/4 
lbs and stripped the skin off it. Added 2 cups of baby lima beans, and 
away we go!
1	smoked turkey leg
2	cups dried baby lima beans
2	onions, chopped
1	large carrot, chopped
2	cloves garlic, chopped
1	dried Thai chile
1	cup of anise, cooked
1	cup celery, cooked
1	3 inch bay leaf

Brought the two cups of beans to a boil in 4 cups of water, turned it 
off and let sit for an hour. Drain the limas, retaining the water they 
soaked in. Simmer the onions and garlic, until translucent. Place the 
drained limas in the bottom of a crockpot, add the bay leaf and chile, 
then the onions, garlic and carrot. Place the turkey leg on top of all 
this, and add enough of the water, to cover. Turn crockpot on high, and 
let it go.
Chop one fennel(anise)bulb, and two stalks of celery, and simmer in some 
of the water until semi done, add to crock pot, after about 2 hours of 
cooking time. Taste now for heat and if not spicy enough, add about 1/4 
tsp of Jim Campells smoked hab powder, the 10 hot stuff! After about 4 
hours, remove the turkey leg, remove the meat from the leg, get rid of 
all the bones, and place meat back in pot. The beans at this point will 
NOT be done, so just let it go until they are. Another coupla hours 
should do it. Now taste again for chile heat, also add salt, about 1 
tbls and now is the time to thicken this if you wish...a mixture of 
flour, constarch and water will do fine. 1/4 cup flour, 1/4 cup 
cornstarch, half cup water, shake well and add to the pot, with it still 
on high. Stir around until it is as thick as you wish. Serve with either 
pasta(ziti) or rice and a salad. There will be enough for a couple more 
meals, or freeze it. Enjoy! cheers, Doug in BC
