You can order Sonoma Habanero Jack from Sonoma Cheese Company and it's a 
whole lot cheaper at this time of year because they don't have to ship overnight. It's 
good for several months unopened in the fridge and probably for at least a year in 
the freezer.

I'd call them at their 800# if you want a large quantity. They might give you a better 
deal.
