[CH] Schnapper en Pappilote Jordanian style

Made this the other day,
1 4lb scnapper (Australian)
1 small glass white wine 
2 pieces of butter unsalted the size of a walnut each, probably should have used olive oil, 
but all I had was the Good stuff.. 
1/2 teaspoon Zatar Powder
Sea Salt  
1/3 teaspoon Jims Habanero Powder

using a really sharp knife make slits diagonally in fish both sides, sprinkle inside and 
out with Jims Powder,salt,Zatar and set aside for 1 hour in fridge
Place on large sheet of Baking paper, dot with Butter or oil on both sides, pour on wine 
fold into parcel, Bake in Moderate oven for 30-35 minutes..
Serve with fresh warm Lebanese bread 

Note My Zatar is from Jordan has Thyme Sesame,Sumach Dill Caraway Fennel and vegetable oil,
I Normally don't use this herb often but my sister in law is going thru a Middle eastern 
phase and gave me a 1/2 Kilo of this herb mix, food wise I did this trip 20 yrs ago..but 
then again I didn't have the Kicker then, Tks Jim
