Belizian Hab Sauce

1 lime, juiced
3 Tbsp white vinegar (Filipino Sukang Pampulutan is nice)
1 tsp salt
4 Habaneros, seeded and stemmed

1 small sweet onion
1 Tbsp vegetable oil
1 cup carrots, chopped
2 cups water

Alternative Recipe

1 lime, juiced and totally zested\add zest 
3 Tbsp white vinegar (Filipino Sukang Pampulutan is nice)\Palm Vinegar is prefered, but hard to 
source here in Oz 
1 tsp salt\Sea Salt first choice or Rock salt 
4 Habaneros, seeded and stemmed\12 Orange Habs is the prefered number

1 small sweet onion\1 large onion
4-5 cloves Garlic
1 Tbsp vegetable oil
1 cup carrots, chopped\2 cups makes more volume 
2 cups water\probably too much

Directions:
Mix lime juice,zrest, vinegar, and salt.
Allow chopped habaneros to soak in mixture at least 20 minutes.

In medium hot pan:
Saute onions\and grlic in vegetable oil until they are clear and soft.
Add the carrots and water, bring to boil.
Reduce heat, cover and simmer until carrots are soft, about 15 minutes.
Remove from heat.
Blend or Whiz in food proccesor
Bottle and store in Fridge..
