Hi All -- My wife is after me to finish all of the chile-related products from last year's garden as this year's stuff is starting to come in. I had a huge bag of dried tabasco chiles, and I used some to make the following sauce, which turned out quite well, if I do say so myself. It is quite hot. Liquid Fire 50 grams dried tabasco chiles (see note below) 6 cloves smoked garlic 1/4 of a medium smoked white onion 1/2 cup white vinegar 1 t sugar 1 t smoked kosher salt NOTE: Rehydrate the chiles in hot water and drain. Place chiles in blender and add enough fresh water to lubricate the blades. Puree chiles and then strain the mixture -- you should have about 1 cup of thick chile puree (the 1 cup of puree is more important than the 50 gram measure given above). To make the sauce: Place 1 cup chile puree, peeled garlic, and rough chopped onion in a saucepan. Add vinegar and bring to a simmer. Simmer for 10 minutes, season with salt and sugar, and puree. Strain puree back into the saucepan and bring back up to heat for a minute or two -- this rounds out the sauce. Pour into clean jar and allow to cool -- store in fridge. Good luck.
