Chiles: The healthy way to pump up flavor without fat

Hot and spicy is coming on even stronger in America,
for a reason that may surprise you: Health.

Because chile peppers have little or no fat or
calories, they add snap and interest to those
skinless, boneless, fatless, steamed, unfried and
routinely tasteless things we're trying to stomach.

"Chiles are a healthy alternative that adds flavor
without fat," said Hala Harbal, editor of Fort
Worth-based Chile Pepper Magazine. "It's a great
alternative to keep things flavorful."

Aside from pumping up flavors and making healthful
food more palatable, Chile Pepper publisher Joel
Gregory said new research suggests chiles can help
suppress appetites.

There's another overlooked reason for the growth of
hot foods. Gregory said the aging baby boomer
generation is likely adding steam to the spicy
movement.

Along with everything else not working as well,
Gregory said, age takes a toll on taste buds. Flavors
need to be stronger for pooped-out boomer buds.

As a result, baby boomers are pouring on the spices,
fueling an expansion in spice usage from 2.1 pounds
per capita in 1990 to 3.1 pounds in 2000, Gregory
said.
