[CH] Curried sweet potato & spinach

As Risa G and a few others are aware, Marie and I have been doing a 
vegetarian kick for the past month or so. A nameless someone:-) nagged 
me, because I have been silent for some time, so I thought that I had 
better post what we had for dinner last night! Doug's meatless curry!

1/4	cup chopped fresh cilantro
1	baseball sized onion, chopped
2	garlic cloves, peeled and chopped
2 - 3	chile peppers chopped, I used super chiles
2	good sized roma tomatoes, peeled & chopped
2	sweet potatoes, peeled, cut into chunks and steamed
1	cup cooked spinach, chopped
1	19oz can chickpeas, drained & rinsed, to get out the salt
1 - 2	tsps good madras curry powder
salt & freshly ground black pepper to taste
In a fairly heavy pan, dump in a couple of tbls of olive oil, add the 
onion, garlic, peppers, and simmer until onion transparent.Sprinkle the 
curry powder and salt & pepper. Add the tomatoes, and when the liquid 
has come out of the tomatoes, add the chick peas and the steamed sweet 
potato, and a little water or chicken stock. Simmer this until all the 
flavors have melded. Add the spinach. If you have garam masala, sprinkle 
in about one tsp and some chopped scallions. Serve with thai rice, and a 
tossed salad, for a filling and satisfying meal, fit for a chile-head!
As a lot of you are aware, I have posted a lot of hot and spicy meat 
recipes which I have devised, over the years, so now I guess I have to 
try and equal that with my hot veggie meals. In truth, we have not 
missed meat at all, still have fish a couple of times a week, but every 
other meal is veggie. NOT vegan, however! Cheers, Doug in BC
