Cranberry Fruit Nut Bread - (I got this off the back of a package of
cranberries years ago.  It may be from Ocean Spray...)

1 cup cranberries, chopped
1/2 cup chopped nuts (I used walnuts, but pecans are really good, too)
1 tbsp orange peel, grated, about 1 orange's worth
2 cups all purpose flour
1 cup sugar
1 1/2 tea baking powder
1 tea salt
1/2 tea baking soda
2 tbsp vegetable oil
3/4 cup orange juice (I usually buy 3 or 4 oranges & juice them up)
1 beaten egg
1 finely chopped hab - or MORE to taste
Preheat oven to 350 degrees.  Grease & flour a loaf pan.  Mix cranberries,
nuts, hab, and orange peel.  Set aside. In another bowl, mix the flour,
sugar, baking powder, soda and salt.  Mix in the orange juice, egg, and oil.
Fold in cranberry nut mixture only to moisten.  Do not over mix.  Spoon into
the prepared pan.  Bake for 60 minutes ( I start checking after 50 minutes).
Remove when toothpick inserted into the center comes out clean.  Cool on a
rack for 15 minutes.  Remove from pan.  Cool completely.
Notes:  My pepper wasn't very hot.  Next time I would add more.  Also, I
usually end up substituting tangerines or clementines for the oranges.  It
gives a nice taste.  I'm sure you could substitute a sugar alternative if
you need.
