Hey Doug, Life is actually stranger than fiction! Roo is a excellent lean meat (wallaby is better though) so it is actually on the cards for my endeavors. Besides it is heaps cheaper than topside beef so that is a big plus. Actually has bugger all fat too as a Roo keeps fat only under the skin. They do Camel and Cape Buffalo jerky here commerially already as they are in plague proportions in our hinterland and Top End of this big brown biscuit!
