[CH] Dinner Last Night - Chicken Curry

This was dinner last night. It was very good.

Simple to do too. Add more jalapeno or some other
chile if you wish. I just used the tomatoes with the
jalapenos in it as I had no fresh in the house.

                           Simple Chicken Curry

   2      tbsp          all-purpose flour
   1      tsp           salt
   4                    skinless boneless chicken
breast -- 6 oz each
   1      tbsp          olive oil -- plus more as
needed
   1      med           onion -- finely chopped
   2      cloves        garlic -- minced
   2      tsp           curry powder
                        kosher salt
   2                    turnips -- peeled & cubed
   1      14.5 oz can   Del Monte Zesty Tomatoes
w/jalapenos -- undrained

Cut chicken breasts into 3rds, vertically.

Place flour on plate and dredge chicken in it, shake
off excess. In a large skillet, heat 1 tbsp oil over
MED heat. Add the chicken, and cook until golden
brown, about 3-4 minutes per side. You might have to
do this in batches. Transfer to a bowl; set aside.

Heat remaining oil in same skillet; cook onions and
garlic, stirring frequently, until onion is soft,
about 5 minutes. Stir in curry powder and 3/4 tsp
salt; cook for another minute or so.

Add turnips and 1 cup water; bring to a boil. Reduce
heat to a simmer; cover and cook until turnips are
tender when pierced with a fork, about 7-9 minutes.
Stir in tomatoes and 1/4 cup water.

Return chicken to skillet with any juices in bowl;
simmer, covered, until chicken is cooked through, 15
minutes.

NOTES : Risa's notes:

If not on a low carb plan, or you don't like turnips,
use red potatoes.

Ro-tel also makes diced tomatoes with chile - they
make it with  green chile. If you like your food a bit
hotter, use the jalapeno version. The one that just
says "Green Chile" uses Anaheim chiles which are very
mild.
