Delicious. * Exported from MasterCook * Vietnamese Style Lettuce Wraps Recipe By : RisaG Serving Size : 1 Preparation Time :0:00 Categories : Fish Low Carb Lunch Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 Boston lettuce leaves -- washed & dried 1 fillet salmon -- cooked 4 spinach leaves -- washed & dried 1 scallion -- cut in 2" lengths Dipping Sauce: 1 clove garlic -- minced 1 chili pepper -- minced 1 tbsp Splenda Sweetener 1 tbsp fish sauce 1 tbsp lime juice 1 1/2 tbsp water Make dipping sauce: Mince the chiles and garlic together. Add Splenda and mix well. Add the fish sauce, lime juice and the pulp from the lime. Set aside for 15 minutes for the flavors to mingle. The sauce keeps for up to 2 weeks stored in refrigerator. For wrap: Clean off 4 larger leaves of Boston lettuce. Take out the top 1/2" of core from each leaf. Cut salmon into 4 small pieces. Cut the scallions into 1" pc. Place 1 pc of salmon and put it in the center of each lettuce leaf. Top with 2 sm pc of scallion and 1 spinach leaf. Roll up, egg roll style. Place seam-side-down on serving plate.
