This was tonight's dinner - Spicy CHicken Chili. I adapted a recipe from the latest Pillsbury Slow Cooker magazine at the supermarket. It had way too little chile for my blood so I upped it a bit. Delicious. I also upped the amount of salt. Add beans too, if you wish. I omitted them as they have a lot of starch in them. * Exported from MasterCook * Spicy Chicken Chili Recipe By : adapted from Pillsbury Slow Cooker, Jan 04 Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 lb chicken thighs without skin -- w/o bones 1 onion -- chopped 2 cloves garlic -- minced 2 tsp dried Mexican oregano -- crumbled 1 tsp salt 1 10 oz can Healthy Request Cream of Chicken Soup 3 cups water 1 tsp ground cumin 1 1/2 tsp Blair's Chipotle Slam Sauce -- or more 2 tsp chipotle pepper -- dried & ground 3 poblano peppers -- roast, seed & chop sour cream -- garnish chopped cilantro -- garnish shredded cheddar cheese -- garnish Cut chicken in thin slices. In 4 qt slow cooker (or bigger), combine chicken, onion, garlic, oregano, salt, soup, water, and chipotle sauce. Mix well. Cover; cook on LOW for 5 hours (or more). Half an hour before serving, add the ground chipotle chile and roasted poblanos. Let cook for another 1/2 hr.
