This was tonight's dinner - an adaptation of a recipe by Donna Hay. She used Harissa, which I did not have but I did have sambal. This is what I did: @@@@@ Grilled Pork Chops in Chile Paste & Lime Marinade | adapted from Donna Hay, Cooking From The Pantry | Marinade: 2 tsp sambal 4 tbsp lime juice 4 tbsp vegetable oil 1 tsp ground cumin 1 tbsp Splenda 2 tbsp chopped cilantro Pork: 4 sirloin pork chops, * from Costco salt, to taste | In a large zip-type bag, place the pork chops. In a bowl, combine the marinade ingredients. Place the marinade in the bag with the chops, mush it around and seal it. Refrigerate for 2-4 hours. To cook, preheat cast iron stovetop grill. When ready to cook (grill is smokin' hot), rub some of the marinade off and put the chops on the grill. Preheat oven to 375 degrees F. Cook chops on stovetop grill for 7 minutes per side. Place in ovenproof skillet and finish cooking, anywhere from 10-20 minutes for 150 degrees F internal temp. Let sit for 10 minutes. Serve with Meditteranean Couscous (box mix) or with basmati rice.** Risa's notes: * I buy sirloin pork chops at Costco. They are about 1 to 1-1/2 inches in thickness and take awhile to cook. You get a large package for about $13 or so. ** For low carbers, use cauliflower "rice" which is a great substitute for the basmati, same color, bland flavor. Also, I put some cooked chopped onion and some cilantro into the finished couscous and melted a tiny bit of butter into it. I drizzled a touch of cilantro oil over the chops before serving them.
