This was tonight's dinner - Chili Con Carne. I adapted this from Jamie Oliver. He used chuck steak which I did not have any of, I used ground turkey. I also used black beans as I didn't have kidney beans. I prefer the black ones anyway. It came out delicious. Of course, I would have preferred that it had more chile in it but I was cooking for Steve too. I lessened the amount. Also, Jamie used fresh red chile and plain chili powder and I used green serranos and chipotle powder. This was great. * Exported from MasterCook * Chili Con Carne Recipe By : adapted from Happy Days w/The Naked Chef by Jamie Oliver Serving Size : 2 Preparation Time :0:00 Categories : Chili & Stew Crockpot Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 med onion -- chopped 2 cloves garlic -- minced olive oil 1 tsp chipotle pepper -- ground 1 green chile -- chopped 1/2 tsp ground cumin salt and pepper 1 lb ground turkey 3 oz sun-dried tomatoes -- in oil 1 14 oz can tomatoes 1/2 stick cinnamon 1 14 oz can black beans -- drained & rinsed Garnishes: shredded cheddar cheese chopped cilantro dollop sour cream Preheat a skillet over MED-HIGH heat. When hot, add oil, onions and garlic. Saute until onions have softened and garlic is lightly browned. Add turkey. Cook until no longer pink. Add chile, cumiin and a little salt and pepper. Place sun-dried tomatoes in food processor. Puree (if it came in oil). If it did not come in oil and you hydrated them by soaking in boiling water, than drain well, add to processor, and drizzle in oil until the tomatoes are a paste. Put the meat mixture into the crockpot. Add the sun-dried tomato paste, canned tomatoes, cinnamon stick and 1/4 cup of water. Season more if necessary. Put crockpot on HIGH. Cover. Cook for 1-1/2 hours. Add drained beans. Cover and cook for another 1/2 hour. Serve garnished with sour cream, or shredded cheese, or cilantro, or all. - - - - - - - - - - - - - - - - - - NOTES : Risa's notes: Jamie Oliver did not cook this in a crockpot. He cooked it on the stovetop until the meat mixture had the tomatoes added. Then he brought it to a boil, covered it with wax paper and a lid, and then put it in the oven for 1-1/2 hours. He also added the beans in the last 1/2 hour of cooking. He suggests making this the day before you wish to eat it so that the flavors meld. I made it earlier in the day and let it sit until dinner time, re-heated it 1/2 hr before eating. This gave the flavors time to meld a bit. He also suggests making lots and freezing it in small containers for eating later. Original recipe called for kidney beans and chuck steak that you grind yourself. He also doubled the amounts.
