[CH] Tonight's Side Dish: Cauliflower w/Mustard-Cheese Sauce

This was tonight's side dish - Cauliflower
w/Mustard-Cheese Sauce. I used Cabot's Habanero
Cheddar and a touch of mozzarella as that is what I
had. It was delicious. I adapted this recipe to
microwave. If you don't have a microwave, boil the
cauliflower and then drain it.

This was from a low fat book - Cooking Healthy Across
America and I turned it into a much higher fat recipe.
If you are watching fat grams instead of carbo grams,
use low fat or fat free mayo and reduced fat cheese.
That is what the original recipe used.

This was delicious.

I served it with a Roast Chicken (w/Sage, Celery and
Blood Orange stuffing) and it was an incredible meal.

                    Cauliflower w/Mustard-Cheese Sauce

   1      head          cauliflower -- broken into
florets
   2      tbsp          water
                        salt
                        Sauce:
     3/4  cup           Cheddar Cheese -- shredded
(habanero)
     1/4  cup           dijon mustard
     1/4  cup           Mayonnaise -- Hellman's
   1      tbsp          dried onions
   1      tsp           dried dill

In a large microwaveable container, place water,
cauliflower and salt. Cover and cook on HIGH for 6
minutes. Drain well. 

In a medium bowl, combine cheese, mustard, mayonnaise,
onion and dill. Add cheese mixture to cauliflower. Mix
well to combine. Return to microwave and cook for
another 2-3 minutes, until cheese is melted and
cauliflower is totally cooked. Stir once during
cooking.
