Since you mention onions - recently I cooked a variant of "dusty potatoes" 
which are potato wedges roasted with a coating of breadcrumbs.  I also 
slivered some onion in among the potatoes.

So, why not slice up a hab or two, and let them toss among the spuds and 
onions?  For that matter, how about some cloves of garlic?
