This was tonight's side dish - Jalapeno Cole Slaw. I adapted it from a Food & Wine Annual. I used napa cabbage instead of the savoy that they asked for. I used very large jalapenos. Actual heat in them too. Bought them at a farmers market in PA a week or so ago. Great price too - huge box of them for $1. Anyway, here is what I did: * Exported from MasterCook * Jalapeno Cole Slaw Recipe By : adapted from Food & Wine 02 p. 65 Serving Size : 4 Preparation Time :0:00 Categories : Chiles Salad Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup olive oil 3 tb red wine vinegar 2 tb cilantro -- chopped 1 ts Splenda Sweetener salt and pepper 1 head napa cabbage -- finely shredded 1 medium red onion -- thinly sliced 2 lg jalapenos -- seeded & thin sliced For dressing: In small bowl, combine oil, vinegar, cilantro and Splenda together. Season with salt and pepper. Set aside. For slaw: In large bowl, combine cabbage, onion, and jalapenos. Mix well. Drizzle dressing on. Combine well so all the dressing coats the slaw. Refrigerate until needed.
