[CH] Last Night's Dinner - Pork Chops w/Gingered Snap Peas

This was last night's dinner. Instead of cayenne
pepper, I used CaJohn's Fire Dust. It was terrific.

                     Pork Chops w/Gingered Snap Peas

   2                    pork chops -- thick ones
                        Teriyaki sauce -- sugar-free
                        Gingered Snap Peas:
     1/4  cup           vegetable oil
   2      tb            fresh ginger -- finely grated
   2      cloves        garlic -- minced
   1      lb            snap peas
   1      tb            tamari soy sauce
   1      ts            Fire Dust -- * see note
                        salt and pepper

For pork chops:

Place pork chops in a large casserole. Pour the
sugar-free teriyaki sauce on top. Coat well.
Refrigerate.

When ready to cook, preheat oven to 350 degrees and
preheat cast iron grill (on stovetop). When hot, place
chops on grill and cook until browned, about 5
minutes. When browned and you have nice grill marks on
one side, turn over and cook for another 5 minutes.

Make sure to preheat a cast iron skillet also.

When hot, place browned chops in cast iron skillet and
place in the oven for 14 minutes until cooked through
but still juicy.

Meanwhile, preheat a skillet over MED heat. When hot,
add the oil. Add the ginger and garlic. Cook for 3
minutes, until golden brown. Add peas and saute,
stirring constantly, for 1 minute. Add soy sauce and
continue cooking for another minute. Add Fire Dust,
stir, transfer to a bowl. Toss peas and let stand,
loosely covered, for 5 minutes. Season with salt and
pepper. Serve.

NOTES : Risa's notes:

Try and find a sugar-free teriyaki sauce. Atkins and
Carb Options make them. If you buy the stuff from
Kikkoman or other oriental companies, they have a ton
of sugar in them.

* Fire Dust is a chile pepper combination made by a
company called CaJohns. If you cannot find it, use
pure chile that is your favorite such as cayenne, or
ancho.
