[CH] Some hot recipes from New Caledonia

I received a collection of recipes from New Caledonia in Micronesia from
someone on another list. It seems they like their chilies there....

     Title: New Caledonia Puree Of Hot Peppers In Soy Sauce
Categories: Micronesian
  Servings: 4

           Hot chilli peppers
           soy sauce
           cane sugar
      2    tomatoes
      5    cloves of garlic

Place hot chilli peppers in a mixer with the garlic and hulled tomatoes,
blend the whole. Add the soy sauce (the sauce must go a dark red colour)
and the cane sugar (sweetens the sauce). Mix, then put the whole in a
jar. This sauce can accompany all kinds of dishes, from roast meat to
shellfish, even dishes in sauce. Be careful, this sauce is very spicy.

     Title: New Caledonia Soy Sauce

  Servings: 4

      9 TB sunflower oil,
      3 TB soy sauce,
    1/2    onion,
      1    clove of garlic,
      2    hot chilli peppers,
    1/2    lemon,
      1 ts caster sugar.

Cut the onion into thin slices, crush the garlic and one or several hot
chilli peppers (1 or 2 hot peppers to taste). In a bowl put the soy
sauce, the juice of half a lemon, sugar and mix the whole until the
sugar has dissolved . Put the small strips of onion, the garlic and the
hot pepper in the preparation to marinate. Wait 10 to 15 minutes then
add the oil and mix.

This sauce is generally used to accompany crab, plain lobster, and cold
fish.

     Title: New Caledonia Guava Sauce

  Servings: 4

      2 c  guava pulp,
      1 md onion,
      1 sm chili, finely chopped, or
        pn ground pepper,
      1    clove garlic, finely sliced
    1/3 c  vinegar,
      1    level teaspoon ground
           allspice ( optional ) ,
  1 1/2 ts ground cinnamon ( optional
           ),
    1/4 ts ground cloves,
    1/4 c  sugar,
           Salt to taste.

Prepare pulp by pressing guava slices through a coarse sieve, or use
pulp left over from making guava juice. Cook onion in water until soft.
Add all other ingredients and mix well. Bring mixture to the boil, then
simmer for 30 - 40 minutes. Pour mixture into hot, sterilized jars and
seal. Serve as a sauce with meat or others foods

     Title: New Caledonia Sweet Pork

  Servings: 4

    1.5 kg round of pork,
      2    onions,
      4 TB nuoc-mam,
      4 TB soy sauce,
      2 TB whisky,
           sugar to make liquid caramel
      2 sm chili peppers,
      1 bn chives.

Remove the skin and fat from the pork (the dish will taste better), cut
the pork into cubes. Boil water in a pot (add a spoonful of nuoc-mam)
and add the pork. Cook for 30 to 45 minutes. Drain the pork. Thinly
slice the onions and brown in a pan with the pork, nuoc-mam, soy sauce
and whisky. Make caramel (cover 8 tablespoons or more of sugar with
water and bring to the boil. As soon as the sugar begins to brown add a
little water). Pour the caramel over the pork and stir. Sprinkle chopped
chives over the dish and serve hot. Hot white rice. You can spice the
dish with a little chili pepper.

     Title: New Caledonia Fish Salad

  Servings: 4

    1.5    kilos of tuna or other fish
           fillet
     20    to 30 small green lemons
           (the juice should cover the
           fish)
      2    carrots
      1    cucumber
      2    tomatoes
           green onions
      1    egg
      2    tins of coconut milk
      2    hot chilli peppers
           salt, pepper, and coarse
           salt

Dice the fish fillets. Let them soak for a few minutes in salt water
(add some coarse salt to cold water). Drain off the water and pat the
fish dry with a tea towel. Put it back in the bowl and cover with lemon
juice ( this lasts a dozen minutes depending on the fish chosen: the
flesh should be white outside and slightly pink inside.Stir it gently
from time to time.

Grate carrots and cucumber, dice tomatoes finely, chop green onions.
Rinse the fish slightly in the cold water (pass it 2 or 3 seconds under
the tap) then drain and pat dry. Cover with coconut milk then add the
vegetables. Mix, add salt and pepper.

To decorate: put a hard-boiled egg through the vegetable mill and
sprinkle on top along with some green onions.

Serve with warm white rice slightly flavoured with the coconut milk (See
recipe under the ingredients heading), you also can decorate the dish
with a light dash of soy sauce. And add spice with a little hot chilli
pepper.

     Title: New Caledonia Breadfruit Fritters

  Servings: 4

      1 c  boiled mature breadfruit,
      1    egg, beaten,
    1/4 c  skimmed milk powder,
      1 TB onion, finely chopped,
           salt to taste,
      1 TB capsicum, chopped
      2 TB water,
           Oil for frying.

Mash breadfruit well with a fork. Make sure to get rid of the lumps. Add
beaten egg and milk powder. Stir well Mix in onion, salt and capsicum
Add just enough water so the mixture will drop off a spoon. Fry in hot
fat, until golden brown. Serve.

      2    medium-sized green pawpaws,
      2 TB butter, margarine or
           dripping,
      1 lg onion, chopped,
      2    cloves crushed garlic (
           optional ),
      1 sm piece grated ginger (
           optional ),
      2    green chillies,
      1 TB curry powder,
      1 c  coconut cream, 1 cup water,
    1/2 c  lemon juice,
           Pepper

Cook the octopus for one hour in a pressure cooker filled with water
(seasoning: salt, pepper, onion with cloves). Peel the octopus (remove
its skin, etc....). Cut octopus into small thin strips. Chop tomatoes,
green onions. Put the whole in a bowl and stir. Prepare a dressing and
add to it the soy sauce and hot peppers. Pour the dressing into bowl,
stir everything together and place in the refrigerator. Serve well
chilled.

Serve hot with cooked taro, sweet potato or breadfruit

      1    Octopus,
      2    tomatoes,
      2 TB soy sauce,
      1 bn green onions,
      1    hot chilli pepper or more to
           taste

Cook the octopus for one hour in a pressure cooker filled with water
(seasoning: salt, pepper, onion with cloves). Peel the octopus (remove
its skin, etc....). Cut octopus into small thin strips. Chop tomatoes,
green onions. Put the whole in a bowl and stir. Prepare a dressing and
add to it the soy sauce and hot peppers. Pour the dressing into bowl,
stir everything together and place in the refrigerator. Serve well
chilled.

This salad can be eaten on its own or with a little white rice.
