Great by itself. Awesome with pineapple sherbet on top.

9-minute pineapple upside-down fire cake
^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^

   6 oz Sliced pineapple
1/2 c Brown sugar
   5 ts Butter
   6 Maraschino cherries
Powdered or finely minced chiles to taste
1/2 box Yellow cake mix
   1 Egg

Coat the inside of a microwavable Bundt pan or other
microwavable cake pan with cooking spray.

Melt butter, add chiles and pour into cake pan. Spread
brown sugar over butter. Place pineapple slices around
on top of brown sugar. Save the juice.

Slice or quarter the cherries and place in and around the
pineapple slices. Mix pineapple juice and egg into the
cake mix. Pour over pineapple slices, cherries and brown
sugar.

Bake in microwave on high for 9 minutes on turntable.
If you don't have a turntable, turn 1/4 turn every 3 minutes.
(This can also be baked in the oven, of course, or given a final
browning there.) Serve warm.
