Continuing my mini-flood here :-) Had the opportunity to see a presentation by Lucinda Hutson this weekend, author of the above named book (Univ of Texas Press). Anybody else familiar with her work? Did some of the most colorful dishes you've ever seen in your life, many of which prominently feature various chiles.
