Every now and then whilst diddy-bopping
through an Asian market I will in a fit of
impulse shopping toss an 18 oz plastic jar of
Sambal Oelek (Hoy Fong Foods,inc etc.) into the cart thinking 
it's a
bargain,
forgetting that it is nothing more than ground peppers,vinegar, 
and salt.
After rediscovering this fact several times (my memory is
not what it should be, at least for this sort of thing)
I vowed never to buy it again.
Never say never.
I bought another bottle online at a price I could not refuse.
But this time I was forewarned and forearmed.

No I don't have four forearms but I discovered a recipe that that
will make this very basic chile paste into something tasty.
This is modification of a recipe from Makan-lah! The True Taste 
of Malaysia.
In the original the recipe called for fresh peppers.


In a blender puree:
5 1/2 oz garlic
5 1/2 oz ginger
2 stalks lemon grass bulbs thinly sliced
1 cup sugar
1 tablespoon lime zest
18 oz jar of sambal oelek
A bit of shrimp paste for those of us that like it.
Blend.
Place puree mixture in a sauce pan and bring to a boil
then simmer for several minutes.

Store in the fridge or freezer.
