Contrary to the illusions (delusions? ;-) of some of the list members here, I don't have any employees working large machinery :-) A paper mask & a coffee grinder described my operations for the first several years of operation! It was more common though to just pull my T-shirt up over my nose & mouth. Several years ago I did snag a bunch of commercial coffee grinders that in fact come out of the local A & P's when they were bought & shut down by Kroger. I've a half dozen of these monsters- Hobarts that weigh about 100 lbs apiece. They are considered burr grinders. I have about 3 that work & the others are scavanged for parts. I've since bought another 6 grinders. "Ditting" is the make & they are MUCH newer than the Hobarts. Ebay is a wonderful thing if you have lots of patience :-) The beauty of the coffee grinders is that you basically set the grind size you want. I can do from powder to very coarse flake... provided the moisture content of the chiles is correct. I've also since upgraded to a full face respirator and tyvek coveralls :-) -Jim C Mild to Wild(R)
